Tabbouleh (تبولة) is a traditional and popular salad in Arab cuisine, especially in countries like Lebanon, Syria, Palestine, and Jordan. It is made with fresh ingredients such as chopped parsley, tomatoes, green onions, bulgur, lemon juice, olive oil, and salt. Burgul (بُرْغُل) is a type of whole wheat that has been cleaned, parboiled, dried, and then crushed. It is high in fiber and quick to prepare, which makes it a common ingredient in Middle Eastern cooking. In tabbouleh, fine bulgur is usually soaked briefly in water or lemon juice to soften before mixing.. أَهْلًا وَسَهْلًا بِكُمْ فِي هٰذَا الْفِيدْيُو الْجَدِيدِ. فِي هٰذَا الْفِيدْيُو سَنَتَعَلَّمُ كَيْفَ نَعْمَلُ سَلَطَةَ التَّبُولَةِ الْعَرَبِيَّةِ
الْمقَادير الَّتِي نَحْتَاجُهَا: بَقْدُونُسٌ مَفْرُومٌ، بَصَلٌ مَفْرُومٌ، بُرْغُلٌ نَاعِمٌ، عَصِيرُ لَيْمُونٍ، طَمَاطِمُ مُقَطَّعَةٌ قِطَعًا صَغِيرَةً، مِلْحٌ وَفِلْفِلٌ، وَنَعْنَعٌ أَخْضَرُ طَازَجٌ
طَرِيقَةُ الْعَمَلِ: أَوَّلًا، نَغْسِلُ الْبَقْدُونُسَ جَيِّدًا، ثُمَّ نَفْرُمُهُ فَرْمًا نَاعِمًا. بَعْدَ ذٰلِكَ، نُقَشِّرُ الْبَصَلَ، وَنَحْتَاجُ إِلَى نِصْفِ كُوبٍ مِنَ الْبَصَلِ الْمَفْرُومِ فَرْمًا نَاعِمًا. ثُمَّ نَحْتَاجُ إِلَى حَبَّةِ طَمَاطِمَ وَاحِدَةٍ. نَغْسِلُ الطَّمَاطِمَ غَسِيلًا جَيِّدًا، ثُمَّ نُقَطِّعُهَا قِطَعًا صَغِيرَةً. ثُمَّ نَغْسِلُ قَلِيلًا مِنَ النَّعْنَعِ الْأَخْضَرِ الطَّازَجِ، وَنَفْرُمُهُ فَرْمًا نَاعِمًا. نَغْسِلُ نِصْفَ كُوبٍ مِنَ الْبُرْغُلِ النَّاعِمِ، ثُمَّ نُصَفِّيهِ مِنَ الْمَاءِ الزَّائِدِ، وَبَعْدَ ذٰلِكَ نُضِيفُ عَلَيْهِ مَاءً سَاخِنًا حَتَّى يُصْبِحَ طَرِيًّا.
أَمَّا الْآنَ، فَنَقُومُ بِتَحْضِيرِ صَلْصَةِ التَّبُولَةِ: نَحْتَاجُ إِلَى رُبْعِ كُوبٍ مِنْ عَصِيرِ اللَّيْمُونِ، وَرُبْعِ كُوبٍ مِنْ زَيْتِ الزَّيْتُونِ، وَنِصْفِ مِلْعَقَةٍ صَغِيرَةٍ مِنَ الْمِلْحِ، وَقَلِيلٍ مِنَ الْفِلْفِلِ الْأَسْوَدِ، وَنَخْلِطُ الْمَزِيجَ جَيِّدًا.
فِي هٰذِهِ الْخَطْوَةِ، نَضَعُ فِي وِعَاءٍ كَبِيرٍ كُلَّ الْمُكَوِّنَاتِ: الْبَقْدُونُسَ، الطَّمَاطِمَ، الْبَصَلَ، وَالْبُرْغُلَ، وَلَا تَنْسَوْا النَّعْنَعَ. ثُمَّ نُحَرِّكُ الْخَلِيطَ جَيِّدًا.بَعْدَ ذٰلِكَ، نُضِيفُ الصَّلْصَةَ، ثُمَّ نُحَرِّكُ جَيِّدًا حَتَّى تَخْتَلِطَ جَمِيعُ الْمُكَوِّنَاتِ مَعًا. نُقَدِّمُ التَّبُولَةَ فِي طَبَقِ تَقْدِيمٍ. وَصِحَّتَيْنِ وَعَافِيَة، وَبِالْهَنَاءِ وَالشِّفَاءِ
