    A. Con sustantivos y verbos (excepto "ser") / With Nouns and Verbs (other than "ser")

Qué + verb asks about things which are the object of the verbo:
What are you looking for? The umbrella.

("umbrella" is the object of "to look for")

If the object requires a preposition, place it before que:
What do you talk about with your friends? About different topics.
This use with prepositions includes the verb ser as well:
What is that book about? It's a book about UFOs.

What are the empanadas (made) of? Of vegetables and chicken.
What are pencils for? For writing.

Cuál(es) + verbo pide elegir entre opciones respecto a elementos mencionados antes (cosas, personas):
Necesito un computador. ¿Cuáles me recomienda Ud.? Los portátiles.
Hay varias rutas. ¿Cuál tomamos? La más rápida.
Tenemos dos temas pendientes. ¿Con cuál quieres empezar?

Cuál(es) + verb demands to choose among a set of previously mentioned elements (things, people):
I need a computer. Which ones do you recommend? Laptops.

There are several routes. Which (one) do we take? The fastest.
We have two pending topics. Which one do you want to start with?

Qué + sustantivo pide identificar una persona o cosa dentro de un grupo (su tipo o clase); en este caso, "qué" funciona como un adjetivo:
    ¿Qué cámara prefieres? La digital.
¿A qué amigos llamas más? A los más cercanos.
¿Qué palabras no entiende Ud.? Esas.
¿De qué manera te explico esto? Con calma.

Aunque menos común y considerado incorrecto hasta hace pocos años,
Cuál(es) + sustantivo también es aceptable:
¿Cuáles palabras no entiende Ud.? Esas.
    ¿Cuál cámara prefieres? La digital.

Qué + noun aks to identify a person or thing within a group (their type or class); in this case "qué" functions as an adjective:
Which camera do you prefer? The digital one.
Which friends do you call more often? My closest.

Which words don't you understand? Those (ones).
Which way should I explain this to you? Calmly.

Although less common and considered incorrect until a few years ago,
Cuál(es) + noun is also acceptable:
Which words don't you understand? Those (ones).
Which camera do you prefer? The digital one.

    B. Con el verbo "ser" / With the Verb "ser" (to Be)

Qué + ser pregunta por la definición o esencia de algo:
¿Qué es un teléfono? Un aparato para hablar.
¿Qué es Brasilia? Es la capital de Brasil.
¿Qué son esos objetos allá en el cielo? Son OVNIs.
Les expliqué qué era una cacofonía.
¿Qué eres? Soy un ser vivo.

Qué + ser is used to ask for the definition or the essence of something:
What is a phone? It's a device for talking.
What is Brasilia? It's the capital of Brazil.
What are those things over there in the sky? They're UFOs.
I explained to them what a cacophony was.
What are you? I'm a human being.

Cuál(es) + ser pide información para identificar algo:
    ¿Cuál es tu teléfono? 234 5678.
¿Cuál es la capital de Perú? Es Lima.
¿Cuál es la diferencia entre estas camisas? Una es nueva y la otra no.
No recordaba cuál era su dirección.
¿Cuáles son los países de Norteamérica? Canadá, Estados Unidos y México.
¿Cuál es tu ocupación? Soy guardabosques.

Cuál(es) + ser is used to ask for information sobre algo:
What is your phone number? 234 5678.
What is the capital of Peru? Lima is.
    What'
s the difference between these shirts? One is new, the other isn't.
He did not remember what his address was.

Which are the countries in North America? Canada, the US and Mexico.
What is your occupation? I'm a forest ranger.

    Resumen

    Uso de qué vs. cuál(es)

    • Con verbos diferentes de ser:
    -

(What is "cacophony"?)
    - cuál/cuáles + ser pide información (identificar algo):
¿Cuál es la capital de Brasil? (What is the capital of Brazil?)

    • Cuando funcionan como adjetivos (junto a sustantivos), pueden emplearse ambos, pero se prefiere qué:
¿Qué/cuál bebida prefieres, té o café?

    Use of Qué vs. Cuál(es)

    • With verbs other than ser:
    -
qué asks for the object of the verb (just like "what" in English):
¿Qué buscas? (What are you looking for?)
    - cuál/cuáles asks to choose among elements (just like "which (one/s)" in English):
Hay dos rutas, ¿cuál tomamos? (There are two routes, which one do we take?)

    • Same use when prepositions are involved, even with ser (qué asks for the object, cuál demands a choice):
¿Sobre qué están hablando? (What are they talking about?)
¿Cuál de los programas es bueno? (Which of the programs is good?)

    • Next to the verb ser, however:
    - qué + ser is used to ask for a definition (to identify something):
¿Qué es "cacofonía"? (What is "cacophony"?)
    - cuál/cuáles + ser is used to ask for a piece of information (English often uses "what"):
¿Cuál es la capital de Brasil? (What is the capital of Brazil?)

    • When functioning as adjetives (before nouns), either can be used, but qué is prefered:
¿Qué/cuál bebida prefieres, té o café? (Which drink do you prefer, tea or coffee?)
